Gazpacho

 Ingredients


3 - medium tomatoes, peeled and chopped 1/2 cup - cucumber, seeded and chopped 1/2 cup - green pepper, chopped 2 - green onion, sliced 2 cups - low-sodium vegetable juice cocktail 1 tablespoon - lemon juice 1/2 teaspoon - basil, dried 1/4 teaspoon - hot pepper sauce 1 - clove garlic, minced

Directions

1 In a large mixing bowl, combine all ingredients. 2 Cover and chill in refrigerator for several hours. Serve cold.
