    INGReDIENTS


    q2 cups whole.wheat flour
    q1 teaspoon salt
    q2 tablespoons vegetable oil
    q1/4 cup milk

    q1/2 cup water

    METHOD

    qCombine the flour, salt, oil, milk, and half the water
    qin a bowl. Mix using a wooden spoon or fingers. Add
    qmore water, 1 tablespoon (15 ml) at a time until the
    qdough forms a ball. Knead the dough with lightly
    qoiled hands for 10 minutes. The dough should be
    qfairly firm. Allow the dough to rest, covered with a
    qdish cloth, for 15 minutes.
    qDivide the dough into 4 to 6 pieces. Roll each piece
    qinto a round 1/4 inch thick. Heat a flat griddle or
    qlarge skillet over moderate heat. Cook the dough, one
    qpiece at a time, pressing it down occasionally with a
    qspatula, until cooked and lightly browned on the
    qbottom. Turn the dough and repeat. The dough may
    qballoon slightly during cooking. Repeat with
    qremaining pieces of dough
